Magnificent Mogul Mung beans

Makes 4 side dish servings

Ingredients

Mung Beans…1 cup

Onion… 1/2 cup finely chopped

Ginger… 1 tablespoon minced

Turmeric… 1/2 tsp

Garam Masala… 1 teaspoon

Salt… 1 teaspoon

Lemon Juice… 1 tablespoon

Olive Oil… 1 tablespoon

Cilantro… 1 tablespoon

Preparation and Cooking Instructions for our moong dal recipe

1. Always sort through lentils and remove any little stones and clumps of earth , Clean and wash until water is clear. Add 6 cups of water and soak lentils for 4 hrs.2. In a heavy-bottomed 6 quart pot add 6 cups water. Bring water to boil. Add Moong and let it boil on high heat for 5 minutes, bring to medium heat, cover and let it simmer for 30 minutes until soft, moist and soupy.3. In a sauce pan heat pan and add olive oil. Fry onions until dark golden brown on medium heat. Add ginger, stir-fry for 1 min. Add Turmeric, Garam Masala , salt and stir-fry for 1 min. Add lemon juice and cilantro,cover. Turn heat off.4. Gently mix the sauce and lentils in the pot, where lentils are been cooked and let it simmer 10 minutes on very low heat.(If lentil are thick add 1/2 cup broth or water bring it to boil and turn the heat off.)5. Garnish with cilantro. 6. Serve with pita bread, rice or salad and yogurt.
