In a hurry for Indian curry recipies? No worry! From our many Indian food recipies, we bring you a couple of our easy and delicious curry recipies that take less than an hour to prepare. This first one is a delicious Curried Broccoli Sweet Potato Soup that is done in no time. Curried Broccoli Sweet Potato Soup Prep Time: 15 min Cook Time: 35 min. Serves: 6 2 tsp. vegetable oil 1 ½ tsp. minced garlic 1 ½ c. chopped onions 1 tsp. curry powder 4 c. vegetable stock 4 c. broccoli florets, chopped 3 c. sweet potato, peeled and diced 2 tbsp. honey 1. In a large saucepan heat oil over medium heat. 2. Add garlic, onions and curry. Cook for 4 min or until onions are softened. 3. Add stock, broccoli and sweet potatoes. Bring to a boil. 4. Cover and reduce heat to low and simmer for 30 min or until vegetable are tender. 5. Transfer soup to food processor or blender. Add honey and puree. This is one of my favorite Indian curry recipies that is renowned in the Punjab State of North West India. It is mildly spiced for the Western palette but you can add more heat by adding cayenne pepper to it. You can do this to any of your Indian curry recipies. Scurry for No Worry CurryPrep Time: 15 minutes, Cooking Time: 30 minutes, Serves6-8To increase serving, simply add veggies and more rice 1 onion cubed ½ in. 1 tomato cubed 1-3 cloves garlic. minced Olive oil to cover the bottom of the pan ½ Tbsp. Fresh ginger,grated 1c. plain yogurt 1 tsp. cummin seeds 1½c. water 1/2 tsp. turmeric powder ½ c. fresh coriander/cilantro, washed 1 tbsp. garam masala 1-1 ½ tsp salt 1 c. chickpea flour 500 grams firm tofu cube or a mixed medley can of beans (You can pre fry the tofu in extra onions) 1. Heat olive oil to fry onions, ginger, garlic and cummin seeds until slightly brown. Add tomato and cover for a few minuets until softened 2. Add dry spices. Heat until spices awake 3. Add yogurt and stir over low heat until bubbling 4. Add flour and stir until well blended 5. Add water and stir until well blended 6. Add tofu or beans 7. Add salt and pepper 8. Simmer 20 -30 minutes 9. Add coriander 10.
