Indian Curry Recipe

Curry Prep Time: 15 minutes, Cooking Time: 30 minutes, Serves6-8 1 onion cubed ½ in. 1 tomato cubed 1-3 cloves garlic Olive oil to cover the bottom of the pan ½ Tbsp. Fresh ginger, grated 1c. plain yogurt 1 tsp. cummin seeds 1½c. water 1/2 tsp. turmeric ½ c. fresh coriander/cilantro, washed 1 tbsp. garam masala 1-1 ½ tsp salt 1 c. chickpea flour pepper to taste 500 grams firm tofu, cubed or a mixed medley can of beans (You can pre fry the tofu in extra onions) 1. Heat olive oil to fry onions, ginger, garlic and seeds until slightly brown. Add tomato and cover for a few minuets until softened. 2. Add dry spices. Heat until spices awake 3. Add yogurt and stir over low heat until bubbling 4. Add flour and stir until well blended 5. Add water and stir until well blended 6. Add tofu or beans 7. Add salt and pepper 8. Simmer 20 -30 minutes 9. Add coriander 10.
