Indian Curry Recipe

This Indian curry recipe is done in a natural yogurt based vegetarian sauce and is served over rice. Authentic Indian food recipes don't have to be hot to the taste. We have made this curry recipe -called kadi in India - mild for the Westen palette. You want to add the heat, add cayenne powder. In less than an hour you will have authentic curry of the Punjab in India. This particular Indian curry recipe is served in the best restaurant on the road from Delhi to the Taj Mahal in India. Curry

Prep Time: 15 minutes, Cooking Time: 30 minutes, Serves6-8

1 onion cubed ½ in.

1 tomato cubed

1-3 cloves garlic Olive oil to cover the bottom of the pan

½ Tbsp. Fresh ginger, grated

1c. plain yogurt

1 tsp. cummin seeds

1½c. water

1/2 tsp. turmeric

½ c. fresh coriander/cilantro, washed

1 tbsp. garam masala

1-1 ½ tsp salt

1 c. chickpea flour

pepper to taste

500 grams firm tofu, cubed or a mixed medley can of beans

(You can pre fry the tofu in extra onions)

1. Heat olive oil to fry onions, ginger, garlic and seeds until slightly brown. Add tomato and cover for a few minuets until softened.

2. Add dry spices. Heat until spices awake

3. Add yogurt and stir over low heat until bubbling

4. Add flour and stir until well blended

5. Add water and stir until well blended

6. Add tofu or beans

7. Add salt and pepper

8. Simmer 20 -30 minutes

9. Add coriander 10. Serve with grilled or fried vegetables over rice
