Butter or oil (less can be used, or none if you simmer and steam instead) - 1 Onion minced - ½ tsp cumin seeds - 1-3 Cloves crushed garlic - 2 Tbsp. Fresh ginger, grated - 1 tsp turmeric - 1 tbsp Garm masala - ½ cup channa Dahl rinsed (can't find dahl scroll to end of page) - 1 cup urad dahl rinsed - 1/8 tsp Chilies or Cheyenne pepper (keep adding by 1/8 tsp to make it as hot as you like) - 5 c. Water or a bit less to taste - 1/8 tsp Pepper to taste (keep adding by 1/8 tsp to make it as hot as you like) - 1-2 tsp. Salt to taste - 1 c. Fresh coriander, washed and chopped 1. Fry onion, garlic, ginger, and cumin seeds in oil or butter. 2. Add tomato. Cook until soft, may need a little water. 3. Add dry spices. Heat until spices awake. (Start singing the song to welcome the dahl “Hello Dolly” into existence. You are a creator of this authentic dish!) 4. Add urad and channa dahl and water 5. Add salt and pepper (Chilies or Cheyenne optional to add heat) 6. Cook 25 – 35 min. in a pressure cooker or over the stove for 2-3 hours. Or 10 hours on high in a crock pot (this is our favorite way a Crossing of Culture) 7. Add coriander 8. Serve over rice with a salad or vegetable side dish.
