Are you ready for a curry fit for a sultan? Of all the curry recipies, this one if the best of the Indian food recipies. This recipe is served in the best restaurant on the road from Delhi to the Taj Mahal in India. We have also included one other favorite from our curry recipies, a curry made from yeallow lentils. Both are delicious and nutritious and easy to prepare. Here is the Scurry for no Worry Curry that is the food of sultans.Scurry for no Hurry Curry1 onion cubed 1 tomato cubed 1-3 cloves garlic, minced Olive oil to cover the bottom of the pan ˝ Tbsp. Fresh ginger, grated 1c. plain yogurt 1 tsp. cummin seeds 1˝c. water 1/2 tsp turmeric ˝ c. fresh coriander/cilantro, washed and chopped 1 tbsp. garam masala 1-1 ˝ tsp salt 1 c. chickpea flour pepper to taste 500 grams firm tofu cube or a mixed medley can of beans (You can pre fry the tofu in extra onions) 1. Heat olive oil to fry onions, ginger, garlic and seeds until slightly brown. Add tomato and cover for a few minuets until softened 2. Add turmeric and garam masala. Heat until spices awake 3. Add yogurt and stir over low heat until bubbling 4. Add flour and stir until well blended 5. Add water and stir until well blended 6. Add tofu or beans 7. Add salt and pepper 8. Simmer 20 -30 minutes 9. Add coriander 10. Serve with grilled or fried vegetables over rice Now here is the curry made with yellow lentilsYellow Lentil Curry Serves: 4 1 c. yellow lentils (Chana dal is the Indian name for these lentils 4 c. water 2 tbsp. olive oil ˝ c. onion, chopped 1 tsp. fresh ginger, grated 1 tsp. garlic, minced ˝ c. tomatoes, chopped 1 tsp. salt ˝ tsp turmeric 1 tsp. garam masala 1 tbsp. lime juice 1 tbsp. cilantro, chopped 1. Sort through the lentils and remove any little stones and clumps of earth. Clean and wash them until water runs clear. Add 6 cups of water and soak them for 2 hours. Drain the water. 2. In a large pot, bring 4 c. water to a boil. Add the lentils and let boil on high heat for 5 minutes. Reduce to low heat, cover and let it simmer for 30 minutes until the lentils are soft and all the water is evaporated. 3. Heat a saucepan and add olive oil. Sauté onions until dark golden brown on medium heat. 4. Add ginger and garlic and stir-fry for 1 minute. 5. Add tomatoes and cook until oil separates. 6. Add turmeric, garam masala and salt, stir-fry for 2 minutes 7. Add cooked lentils, lime juice, and cilantro and mix. Cover, and turn the heat off. 8. Serve with pita bread or for a quick snack roll it in a burrito.
